These are very similar to the Cheesecake Marble Brownies I made, but with POM pomegranate juice. I began with my Chewy Fudge Brownie recipe. Then I made a mixture of cream cheese, sugar, egg, and flour which I swirled into the brownie batter.
Brownie:
1 1/4 c. butter
2 c. sugar
1 c. cocoa
1/4 c. coffee, strongly brewed
1/2 c. semi-sweet chocolate chips
1 Tbsp. vanilla
4 eggs, slightly beaten
1 3/4 c. flour
2 c. chopped nuts (optional)
Melt butter and stir in sugar, cocoa and coffee. Stir in chocolate chips until melted. Add vanilla. Add slightly beaten eggs and mix well. Stir in flour. Spread into greased 9x13" pan.
Filling:
8 oz. cream cheese
1/2 c. sugar
1 egg
1/4 c. POM pomegranate juice
1/4 c. flour
Beat cream cheese and sugar until smooth. Beat in egg and pomegranate juice. Stir in flour. Drop by spoonfuls on top of brownie batter and use a knife to swirl cream cheese mixture into the batter. Bake in preheated 350 degree oven for about 25 minutes.
White Chocolate POM Frosting:
4 oz white chocolate, melted
1/4 c. POM pomegranate juice
1/2 tsp. vanilla
1 1/2-2 c. powdered sugar
Mix together melted white chocolate, juice and vanilla. Beat in powdered sugar to reach desired consistency. Add more powdered sugar or juice if needed. Spread on top of cooled brownies.
